Today I learnt about the @puratos.grand.place.vn worldwide project Cocoa Trace. This sustainability project focuses on creating value and equal opportunity for everyone, from the farmers to the customers through taste improvement! Training, fair and premium pricing as well as a Chocolate bonus for cocoa farmer allows for the highest quality bean to be produced. This improves flavour in the biggest way before it enters the fermentation process of cocoa mass production. I think many of us are looking for a sustainable way to source our food. Programs like Cocoa Trace focuses on taste to ensure everyone in the circle of chocolate is cared for. Doesn't get much better than that! Thank you to Wendy, Ginny and Nicholas for guiding me through this farm to chocolate process. And of course for testing all of the chocolate 🥳 Thank you to Puratos Australia and New Zealand for giving me this opportunity to come all the way to Vietnam to explore and learn. I am truly greatful and am looking forward to bringing my new knowledge back to Australia! .
