We were honoured to have Patisserie Chef, Marike Van Beurden last week for a Ravifruit demonstration, thanks to Ravifruit Australia and F.Mayer Imports.

A packed audience was amazed by the 6 fabulous technical desserts Marike made at the NBIA Kitchens, with lots of people taking home treats after filling up on tasting them all!

Baking Industry Training Australia (BITA) is a fully registered training organisation (Provider # 31200) that delivers nationally accredited training for the baking industry. BITA is owned and operated as the training arm of the National Baking Industry Association (NBIA) which gives industry direct control and input into the training of our industry’s future. Industry control also means that any funds generated through training can be re-invested directly back into the development of the baking industry.

BITA offers specialised on-site programs designed to meet the needs of apprentices, employers and industry. School based apprentices are able to access this program as well. BITA courses are specifically tailored to the needs of the baking industry.

Martin Schett


Originally from Austria, Martin has seen success in the baking industry working as an Executive Pastry Chef across international 5-star Hotels in Austria, Switzerland, England, Brisbane and Port Douglas. Martin’s wealth of knowledge and array of experience led his desire to pass on his skills to the younger generation. In 2010, he successfully completed a Bachelor of Adult Education at the Queensland University of Technology and has been educating students since.

Martin’s passion and excellence was further recognized in 2011, where he was selected to participate in the Capability Building – Enterprise Engagement Project established by the Department of Education and Training. He has conveyed a range of management experience throughout all levels, proving Martin’s role as an educator particularly suitable for ambitious bakers and chefs.

Dean Swindells


Dean’s career has spanned five decades; gaining experience in every facet of the baking industry as a pastry cook, baker, and miller. He recently achieved top marks worldwide for the National Association of British and Irish Millers’ (NABIM) Certificate in Flour Milling and was named the recipient of the inaugural ‘Jack Walsh Intermediate Milling Awards’ from the Australia Technical Millers Association.

Chris Hurford


Chris started in the Baking Industry in the early 80’s in NSW. His career has taken him to experience baking also in England, Greece and parts of Africa. Chris has been an active participant both as a competitor and judge of bread shows throughout the eastern states for 25 years. He has covered all aspects of managing and running bakeries from 10 staff to 80 staff. During the time he owned his own bakery he won Qld Bakery of the Year 3 times.
