French pastries with a twist

The NBIA recently spoke to Le Gourmand owner Frédéric Mariage about his French speciality and what he loves most about baking.

Le Gourmand is a small family business located in the bustling bohemian suburb of Newtown which is about 20 minutes out of the Sydney CBD. The café is known for its great coffee, delicious French food, and their creative selection of macarons and croissants all made with love in a 100% animal product free kitchen.

Fred is a French born and trained chef with more than 25 years of experience in the kitchen. He moved to Australia in 2010 and after working in various fine dining restaurants around Sydney for about five years he opened Le Gourmand in 2021 to pursue his love of baking and pastry. Today Le Gourmand produces various French dishes from Tuesday to Sunday, suitable for those who are vegetarian, egg free, dairy free, and vegan. They also have a large range of gluten free products. Not that you can tell that these products are anything but the traditional French recipes!

Visitors to Le Gourmand can find a menu full of flavoursome macarons, crisp crème brulee, decadent chocolate mousse, and sweet and savoury flaky croissants, in addition to European deli items like cheese, condiments, pate, and more.

Their customisable macarons are extremely popular. Perfect for special occasions like weddings or baby showers to brand activation, brand awareness and corporate events. These drool worthy macarons are also available in 10 delicious flavours.

Fred’s mission is to make eating out an easier experience no matter what your dietary needs are and why not do it in French style! He likes to push the norm and says, “baking is about skills. Life is about new and better experiences, combining the two lets me create new products that are amazing and food that has less allergens”.

Fred rates running his own business and offers the following advice to those thinking about opening their own baking business or a career in the industry. “Just go for it, do what you are passionate about and if you can benefit someone else – even better for the world”.
